BBQ Breakfast Fatty
- 1 package of bacon
- 1 package breakfast sausage
- 5 large eggs
- 1 cup shredded cheese
- ½ white onion – chopped
- ½ green bell pepper – chopped
- 2 McDonald’s hash browns
- Meat Church Honey Hog BBQ Rub
- Salt and pepper
- 1 cup sweet BBQ sauce
Cooking Directions:
1. Prepare smoker to 275 degrees Fahrenheit.
2. Sauté the chopped onions and bell peppers and scramble the eggs into the mixture.
3. Salt and pepper to taste and add as much cheese as you’d like.
4. Next, depending on how many strips of bacon are in the package, make a 6x6 or 7x7 tight bacon weave.
5. Roll out your breakfast sausage on a piece of parchment paper for easy transfer onto the bacon weave. Try to roll the sausage out to the same size/shape of the bacon weave and then transfer it onto the bacon weave from the parchment pape.r
6. Add the scramble mixture evenly across the sausage and sprinkle cheese and Honey Hog BBQ Rub over the top.
7. Here is where the Sam the Cooking Guy twist comes in… Add a row of McDonald’s hash browns (intact) across the scramble mixture.
8. Carefully roll the bacon weave up tightly to form the shape of a burrito.
9. tuck the ends of the wrap in and secure them with toothpicks.
10. Sprinkle more Honey Hog BBQ Rub over the top and place on the smoker.
11. Cook until the internal temp of the sausage reaches at least 160 degrees Fahrenheit (should take about 90 minutes).
12. Once up to desired temperature, remove the Fatty and allow to rest for at least 10 minutes.
13. Slice into desired portions and add salsa of your choosing or just enjoy as is!
